List of Ingredients
1 pkg. corn tortillas
3/4 lb. pork sausage
1 t. Taco seasoning mix (see separate recipe)
1/2 cup tomato sauce
1 cup shredded Monteray Jack
Jar of Taco salsa
Lightly fry tortillas on both sides in hot oil, keeping soft.
Blot well with paper towel.
Fit each caerfully in muffin tin.
Saute sausage until brown.
Crumble and drain.
Add taco seasoning and tomato sauce.
Spoon some into each tortilla cup.
Place in oven and heat to 325.
Remove hot pan and place raw egg in each cup.
Bake for 10 min.
Remove and spoon warm salsa around edges.
Top with cheese.
Bake until eggs are set (5 min.).
