    Indoor Chicken Clambake

    List of Ingredients

    1 cup raw rice
    1 3/4 cups water
    1 t. salt
    1/8 t. saffron
    2 3 1/3 lb. broiler-fryers
    salt, pepper
    2 doz. littleneck clams
    1/2 ;b. hot Italian Sausage


    Preheat broiler 10 mon.
    In covered saucepan,simmer rice in water with salt, 5 min
    Stir in saffreon
    Spread rice, undrained in bottom of 14"x9"x2 1/4" roasting pan.
    Sprinkle chickens with salt and pepper
    Arrange in shallow pan
    Broil 9" from heat 15 min. on each side.
    Scrub clams
    Cut sausage in 1" pieces
    Resent oven for 325.
    Top rice with chicken
    Tuck clams in here and there
    Scatter sausage pieces over all
    Cover pan with foil.
    Bake 1 hr.
    Uncover, bake 10 min.
