RUSSIAN BEEF STROGANOFF

Serves 4 to 6.
List of Ingredients
2 tsp. dry mustard 2 tsp. salt
1 1/2 tsp. sugar 1 tbsp. water
4 lg. onions 1/2 c. olive oil
1 lb. med. size mushrooms 2 cloves garlic, minced
2 lbs. beef filet 2 c. sour cream, room temperature
1 1/2 tbsp. flour Freshly ground pepper
1/2 c. sherry wine
Combine the salt, mustard, sugar, and water in a small bowl and set it aside.
Slice onions and cut the beef into 2-inch strips and then set it aside. Heat oil in a large skillet and sauté the onions and garlic until done.
Add the beef and cook until browned add mushrooms, cover and cook on medium heat for 20 minutes.
Blend together the mustard paste and flour and add to meat. Blend well.
Lower heat and slowly add the sour cream.
Be careful not to scald the sour cream. Sample, then add the cooking sherry to taste. Serve over noodles.
