    Betty Crocker Cookie Cookbook

    List of Ingredients

    1 cup flour
    1/2 cup butter -- softened
    1/4 cup powdered sugar
    1 cup granulated sugar
    2 eggs
    2 teaspoons grated lemon peel -- if desired
    2 tablespoons lemon juice
    1/2 teaspoon baking powder
    1/4 teaspoon salt

    Preheat oven to 350 degrees F. Spray an 8-inch square baking pan with nonstick cooking spray.

    Mix flour, margarine and powder sugar. Press into prepared baking pan, pressing dough to make a 1/2-inch edge around the pan. Bake 20 minutes.

    Beat remaining ingredients until light and fluffy, about 3 minutes. Pour over baked crust. Bake until no indentation remains whin touched in the center, about 25 minutes. Cool then cut into bars. The recipe suggests cutting into 48 bars but we like ours a bit bigger, around 24 bars or so.
