King Arthur Flour
List of Ingredients
2 cups flour -- preferably King Arthur Flour
1 teaspoon cinnamon -- up to 2 teaspoons total, depending on taste
1/3 cup sugar
1/2 teaspoon salt
1 1/2 cups milk
4 apples -- peeled and chopped, sprinkled with lemon juice to prevent browning
butter or vegetable oil to grease the griddle
Blend the dry ingredients together. Beat the eggs until they are light and mix in the milk. Blend the wet ingredients with the dry mixture. Gently fold in the apple.
Melt butter in a griddle and drop the batter by the tablespoonful, allowing room for the batter to spread. Cook the pancakes on both sides until golden.
