    Splendid Blueberry Buckle

    Adapted and updated an old Betty Crocker recipe. Used Splenda For Baking to lower the sugar content.

    List of Ingredients




    6 tablespoons Splenda Sugar Blend for Baking
    1/4 cup soft margarine
    1 large egg
    1/2 cup skim milk
    2 cups flour
    2 teaspoons baking powder
    1/2 teaspoon salt
    2 cups blueberries
    Topping
    1/4 cup Splenda Sugar Blend for Baking
    1/3 cup flour
    1/2 teaspoon cinnamon
    1/4 cup soft margarine

    Preheat oven to 375 degrees F. Spray a 9-inch square baking pan with nonstick cooking spray.

    Mix together the dry ingredients plus the soft margarine. Add the milk and egg then stir. Combine the baking powder and salt then add to the ingredients. Stir in.

    Add the blueberries and gently fold into batter.

    Turn out batter into prepared baking pan.

    Topping: In a medium bowl, combine Topping ingredients. Sprinkle over cake batter.

    Bake 45 to 50 minutes or until golden.

    Serves 9 to 12.
