Maraschino Cherry Cake

A favorite party cake from an old Betty Crocker cookbook.
List of Ingredients
1/2 cup shortening -- soft
1 1/8 cups sugar
2 1/4 cups cake flour
2 teaspoons baking powder
3/4 teaspoon salt
1/4 cup cherry juice
1/2 cup milk
3/8 cup chopped nuts
12 maraschino cherries -- cut in eighths
4 egg whites -- 1/2 cup total
Preheat oven to 350 degrees F.
Grease and flour two 8-inch round cake pans or 1) 9-inch square baking pan.
Cream together until fluffy: shortening and sugar.
Combine the dry ingredients and add alternately with the milk, cherry juice and chopped nuts. Stir in maraschino cherries. Fold in beaten egg whites.
Pour into prepared pan(s). Bake layers for 30 to 35 minutes and square for 30 to 35 minutes.
Frost with favorite white frosting made with cherry juice. Decorate with red stemmed cherries.
