    3 cups sugar
    1 1/2 cups milk
    3/4 teaspoon salt
    1/2 cup marshmallow cream
    3/4 cup candied cherries or candied orange peel -- optional

    In large saucepan, over medium heat, heat sugar, milk and salt to boiling, stirring until sugar is dissolved. Set candy thermometer in place and continue cooking, without stirring, until temperature reaches 234 degrees F. Remove from heat and add butter and vanilla. Let cool until lukewarm (110 degrees F). Butter 8 x 8-inch square pan. With spoon, beat mixture until it holds it shape. Add marshmallow cream. Continue beating until mixture loses its gloss. Quickly stir in cherries or candied orange peel, if using. Cool on wire rack until cold. Cut into 36 squares. Opera Fudge: omit chocolate and fruit. If desired, add 3/4 cup chopped nuts.
