Freezer Scalloped Potatoes and Ham

1 pound cooked ham -- cut into small cubes
5 pounds potatoes -- sliced
1 large onion -- chopped
1 pound Cheddar cheese -- shredded
1/2 cup butter
1/2 cup flour
4 cups milk
salt and pepper -- to taste
Sauce: Melt butter in a heavy saucepan. Whisk in flour and heat to boiling point. Add milk and whisk constantly until smooth and mixture thickens. Season to taste with salt and pepper.
In a separate pan cook the ham and onions until softened. Boil the sliced potatoes until tender but firm. Divide potatoes between five freezer bags. Divide ham and onions between the five bags. Divide equally between the freezer bags to cover the meat mixture. Seal, label and freeze.
To Serve: Thaw mixture in refrigerator. Pour into baking pan and sprinkle with Cheddar cheese. Bake at 350 degrees F for 20 minutes or until heated through.
