    Recipe Introduction

    Comfort dessert from your pressure cooker.

    List of Ingredients

    2 cups milk
    2 eggs
    1/3 cup sugar
    1/4 teaspoon salt
    1/2 teaspoon vanilla
    1/2 cup water added to cooker


    Add cooker rack to pressure cooker.

    Scald milk and cool slightly.

    Mix together slightly beaten eggs, sugar and salt. Whisk in milk. Add vanilla and whisk to combine. Pour mixture into custard cups. Top cups with foil. Place cups on rack. Place another rack, or flat cover, on top. Add remaining cups to layer. Place cover on cooker. Allow steam to flow from vent pipe to release all air from cooker. Place indicator weight on vent pipe and cook 3 minutes with stem at cook position. Cool cooker at once. Chill.


    Chocolate: Scald milk with 1 square of grated chocolate (1 ounce).

    Coconut: Sprinkle 1 tablespoon coconut over the top of each custard.

    Maple-Nut: Substitute maple flavoring for vanilla and place 5 or 6 pecan nut meats in each custard cup.
