Soft Chicken Tacos

Easy to make, especially if you freeze up portions of chicken to thaw and use for this Mexican sandwich.

1 large Mission Flour Tortilla -- heated
1 tablespoon Lowfat sour cream
1/2 cup shredded lettuce
2 1/2 tablespoons cooked chicken -- cub
1 tablespoon Cheddar cheese -- grated
Soften tortillas by heating them on a hot skillet. They should be soft not crisp. Quickly spread tortilla with a small amount of sour cream. Sprinkle lettuce down center. Top with warmed, cooked, chicken cubes, cheese and salsa. Fold sides and ends over to enclose filling. Serves 1.
