    2 cups chicken broth
    2 tablespoons butter
    1 shallot -- finely minced
    1 cup long-grain rice
    salt and pepper -- to taste

    Preheat oven to 375 degrees F.

    Bring chicken broth to a boil.

    Melt the butter in a heavy casserole over medium-high heat. Add the shallot and cook until translucent, 3 to 4 minutes.

    Reduce heat to medium, add rice, and cook until opaque, about 5 minutes. Pour in the boiling broth, cover, and put in the middle of a hot oven. Bake for 18 minutes. The liquid should be absorbed and the rice fluffy. Correct seasoning and serve hot. Serves 2.
