    Pressure Cooking the Easy Way

    Recipe Introduction

    I sometimes cook this using my Instant Pot Gem. I can brown the meat in the Gem and then select the Stew setting.

    List of Ingredients

    1 pound lean stew beef, cut into 1-inch cubes
    1 medium onion, chopped
    2 cups beef broth
    2 cups beef broth
    1 1/2 cups Burgundy
    1 bay leaf
    1/2 teaspoon basil
    1/2 teaspoon garlic powder
    4 medium potatoes, cut into cubes
    3 carrots, cut into 1-inch slices
    1 cup celery, sliced
    2 tablespoons arrowroot, dissolved in 2 ounces cold water
    Salt, to taste


    Spray pressure cooker pan with nonstick cooking spray. Brown meat and onions. Add broth, Burgundy, and seasonings. Bring to high pressure over medium heat and cook 6 minutes. Quick-cool cooker under running water, open, add vegetables. Again, bring to high pressure and cook another 3 minutes. Quick-cool cooker. Remove bay leaf and thicken with arrowroot mixture. Heat until thickened. Add salt to taste. Serve with dumplings and a green salad.


    Chicken Stew: Use 1 pound boneless skinless chicken thighs and breast for beef. Use white wine instead of Burgundy. Substitute button mushrooms for celery and use leeks instead of carrots.

    Turkey-Vegetable Stew: Use turkey instead of beef and use 2 potatoes instead of 4. Add 2 peeled sweet potatoes for carrots and use dry white wine instead of Burgundy.
