    Medium White Sauce with Variations

    List of Ingredients




    2 tablespoons flour
    2 tablespoons butter
    1/4 teaspoon salt
    1/8 teaspoon pepper
    1 cup milk

    Melt butter over low heat. Add flour, salt and pepper. Whisk until smooth and heat over low heat until bubbly. Add milk and whisk into flour mixture. Bring to a boil and boil 1 minute.

    Curry: Add 1/2 teaspoon curry powder to the butter before adding flour and other seasonings.

    Dill: Add 1 teaspoon fresh or 1/2 teaspoon dried dill and a dash of nutmeg with the salt and pepper. Follow above recipe. Good with fish.

    Seafood Sauce: Fold in cooked shrimp, lobster or crab into white sauce. Serve with salmon or tuna.

    Red Sauce: Stir in 3 tablespoons tomato puree. Good with chicken or eggs.
