Mona's Potato Soup
9 medium white potatoes, peeled diced in 1/2 inch pieces or smaller ( I like smaller)
1 large onion, chopped fine
3 ribs celery, chopped in small pieces
1 PACKAGE dry onion soup
1 stick of I can't beleive its Not Butter?� margarine
2 ( 10 1/2 oz.) can chicken broth (Campbell?s� size)
3 qts. 2% milk or whole milk
salt and pepper, to taste
Wash vegetables and cover witg chicken broth. Add dry soup, margarine, Bring to a boil, reduce heat to medium, and cook until potatoes are very tender.
Add milk, salt and pepper and bring almost to a boil; reduce heat to simmer for about 2 hours, stirring frequently.
Serve with cheese and crackers,,,SOME LIKE IT WIH FINE SHEDDED MILD CHEDDER CHEESE IN IT�
