    Marian's Creamed Chicken on Rice

    List of Ingredients

    1/2 cup butter
    1/3 - 1/2 cup flour
    3 cups chicken broth
    1 1/2 cups half and half
    4 cups chopped cooked chicken
    1 1/2 cups frozen peas
    1 cup frozen corn
    1 cup baby carrots -- grated
    salt and pepper -- to taste


    Melt butter in large saucepan. Add flour and stir over med heat for 2 minutes. Stir in warmed chicken broth and bring to a boil. Stir in the half and half and bring to a simmer. The sauce should be thickening up a bit. Add the chicken vegetables and heat through. Taste and adjust seasonings with salt and freshly ground black pepper. Serve over hot rice.
