    Cabbage Casserole

    I will admit that adults like this recipe more than kids - I think it's delicious.

    List of Ingredients

    1 pound ground beef
    2 medium onions -- diced
    1 small head of cabbage -- coarsely sliced
    2 medium carrots -- grated
    1/4 teaspoon pepper
    2 teaspoons salt
    3/4 cup long-grain white rice
    1 14 oz. beef broth
    1/2 cup water


    Recipe

    In 5 qt. Dutch oven or stew pot, brown ground beef and onion. Drain and remove from heat. Add cabbage, carrots, pepper and salt; toss to mix well. Pour rice into 3 qt. casserole; top with meat and cabbage mixture. Pour broth and water over all. Cover tightly and bake at 350 for 45 minutes to 1hour. Stir before serving. Makes 6 servings.

    Marian's note: To make this recipe bigger, I increased the rice to 2 cups and the broth to 4 cups.
