    Almond Flour Cookbook - Elana

    Recipe Introduction

    This is a delicious little cookie from Elana's Almond Flour Cookbook. I've made a few revisions but they are very good!

    List of Ingredients

    2 1/2 cups blanched almond flour
    1/2 tsp sea salt
    1/2 tsp baking powder
    1/2 cup coconut oil -- melted at a low heat
    1/2 cup palm sugar -- dissolved in enough water to make 1/2 cup total
    1 tbsp. vanilla extract
    1/2 cup chocolate chips
    1/2 cup cashews, dry-roasted -- chopped
    1/2 cup coconut

    Preheat oven to 350. Mix the almond flour, sea salt and baking soda together in a medium sized bowl. Melt the coconut oil over low heat and add the dissolved palm sugar and vanilla to it. Mix that up and then pour over the almond flour mixture, stirring so it's all mixed together. Stir in the chips, nuts and coconut and mix well. Place tablespoon size drops of dough on parchment lined cookie sheets and press down to make a disc. Leave about 2" between cookies. Bake for 7-10 minutes and then put on cooling rack to cool.
