    Even rhubarb haters like this one...the sweet, crunchy, oat crust offsets the tangy smoothness of the rhubarb! Delicious.

    List of Ingredients

    1 cup flour
    3/4 cup rolled oats
    1 cup brown sugar, packed
    1/2 cup melted butter
    1 teaspoon cinnamon
    4 cups diced rhubarb
    1 cup sugar
    2 tablespoons cornstarch
    1 cup water
    1 teaspoon vanilla


    Mix crumb topping together and press half the mixture into a 9x9 greased layer pan. Cover bottom layer with rhubarb. Combine sugar, cornstarch, water and vanilla in a small saucepan. Cook, stirring, until thick and clear. Pour over rhubarb. Top with remaining crumb topping. Bake at 350 F. (325 for glass pans) for 1 hour. Cut in squares and serve warm - plain or with whipped cream or ice cream.
