Potato and Bacon Supper
List of Ingredients
1 onion - thinly sliced
several cloves garlic, minced
1/2 lb. bacon, chopped and cooked
Cook up the bacon until crisp. Slice up the onion and potatoes (thin slices - about 1/4" thick). Mix eggs in another bowl. Over med-hi heat, in 12" frying pan, pour 1/2" olive oil. Add potatoes, onion and garlic. Stir around, add salt, and then cover and let cook for about 10-12 minutes or until potatoes are tender. Using a slotted spoon, remove potato mixture to a bowl and set aside. Pour off olive oil and wipe pan clean. Pour in a little bit of fresh olive oil and put potato mixture back in pan over med-hi heat. Combine the eggs and cooked bacon with the potato mixture, stirring mixture until eggs are cooked. When eggs are set, serve. Add salt and pepper to taste.
