    Zucchini Oven Frittata

    List of Ingredients

    3 zucchini -- (1 1/4 lb.)
    1/2 green pepper -- finely chopped
    1 cup water
    1/2 teaspoon salt
    3 tablespoons olive oil
    2 cloves garlic
    1 small onion -- finely chopped
    6 fresh mushroom -- thinly sliced
    5 eggs -- well beaten
    salt and pepper -- to taste
    1 tablespoon butter
    1 cup mozzarella cheese -- (4oz)
    3 tablespoons parmesan cheese -- grated


    Wash zucchini and cut into 1/4" thick pieces. Put in cast iron (oven proof) frying pan. Add green pepper, water, salt, oil and simmer till zucchini is lightly cooked (5-7 min. approx.). Add garlic cloves to simmer, sliced lengthwise. Pour off water and garlic, leaving zucchini and pepper in pan. Add onions and mushrooms. In small bowl, beat eggs, S & P. Dot zucchini with butter and keep over low heat. Saute 'til butter is melted and onion is transparent. Add eggs. Cook over low heat til the eggs start to look firm. The top will still be runny. Spread Mozarella on top and place in a preheated 350 oven for 10 minutes. It will look a little gooey. Remove from oven and sprinkle Parmesan cheese on top. Place under broiler for about 5 minutes. Cool 5 minutes. Cut in wedges and serve.
