Sweet and Sour Chicken

This recipe has been around for quite a while...it's wonderful served with hot, fluffy rice.
List of Ingredients
1 8 oz. bottle Russian (Catalina) dressing
1 envelope dry onion soup mix
1 10 oz. jar apricot preserves
8 chicken breasts
Combine first 3 ingredients. Place chicken in well buttered shallow dish. Pour sauce over chicken and bake, uncovered, at 350 for 1 hour, basting twice. Serve over rice. Can use other pieces of chicken as well.
