Chicken Noodle Soup

1 12 oz. Reames Homestyle Frozen Egg Noodles***
8 cups water
2 tablespoons chicken bouillon base
1/2 onion -- minced
2 cans cooked chicken or cubed chicken
1 tablespoon fresh parsley finely chopped
2 1/2 carrots -- pennied
Put water, chicken, and minced onion in a large dutch oven. Bring to a boil. Add bouillon granules (I like to use Better Than Bouillon), dissolve. Drop in frozen noodles and stir to separate. Add carrots. Simmer 50 minutes. Add more water as needed. Makes 20 cups. Sprinkle in parsley just before serving.
***If you use regular egg noodles, you don't need to simmer it so long - just until the noodles are cooked - 8-10 minutes. The frozen noodles take a lot longer, but they're thicker and more hearty.
I've had trouble finding Reames noodles in So. Cal. but there are other brands.
