    Pumpkin Cake Roll

    Preheat oven to 350 degrees


    List of Ingredients


    • 3 eggs
    • 1 cup sugar
    • 2/3 cups pumpkin
    • 1 tsp. lemon juice
    • 3/4 cup all-purpose flour
    • 1 tsp. baking powder
    • 2 tsp. cinnamom
    • 1 tsp. ginger
    • 1/2 tsp. nutmeg
    • 1/2 tsp. salt
    • 1 cup chopped nuts
    • FILLING
    • 1 cup powdered sugar
    • 2 (3oz.) packages cream cheese.
    • 4 Tablespoons butter
    • 1/2 tsp. vanilla


    Instructions


    1. Stir together flour, baking powder cinnamon, ginger, nutmeg and salt. Set aside
    2. Beat eggs on high speed for 5 minutes. Gradually beat in sugar, pumpkin and lemon juice.
    3. Fold the dry ingred. into the pumpkin mixture.
    4. Spread onto a 15x10-Inch jelly roll pan. Top with the nuts.
    5. Bake at 350 degrees for 15 minutes. Turn out onto a towel sprinkled with powdered sugar. Roll up in the towel. Cool completely. Unroll and fill.
    6. FILLING
    7. Beat all ingredients until smooth. Spread over cake. Roll up and chill.
