    Cottage Meat Loaf

    Temperature; 400 degrees
    Serves 5-6

    List of Ingredients

    • 1-1/2 pounds lean ground beef
    • 1/2 cup tomato ketchup
    • 1/3 cup tomato juice or tomato sauce
    • 1/4 tsp. black pepper
    • 1 tsp. salt
    • 1/8 tsp. red pepper
    • 2 eggs, beaten
    • 3/4 cup fresh bread crumbs or croutons
    • 1/2 cup finely chopped onions
    • 2 tsp. prepared mustard
    • 1/4 cup tomato ketchup
    • 1/2 tsp prepared mustard
    • 2 tsp. brown sugar
    • 1/4 cup chopped green bell pepper (OPTIONAL)
    • Garnish with fresh herbs (optional_


    1. In a large bowl, combine ketchup, tomato juice or sauce, salt, black and red pepper, eggs, bread crumbs, onions and mustard.(green bell pepper, if desired). Mix until well blended.
    2. Add ground beef. Mix gently but thoroughly.
    3. Line a 9x5-inch loaf pan with foil. Press in the beef mixture. If using glass loaf pan, do not line with foil.
    4. In a seperate bowl, combine the topping ingredients, mixing well. Spread topping over the meat loaf.
    5. Bake at 400 degrees for 45 to 60 minutes checking for doneness.
    6. Drain off fat. Rest meat loaf 5 minutes before serving. Garnish

    Final Comments

    If using lean beef that is 93 percent fat-free, there will be hardly any grease to drain off.
