This is a quick dish and very tasty!
List of Ingredients
6 or more Zuchinni Squash ,sliced or large diced
1 onion, diced
2 green peppers, cut into strips or large dice
1 med. hot bananna pepper, diced
1 green tomato, diced (optional)
2 Tablespoon butter or margarine
1 can stewed tomatoes
1/2 cup macaroni or instant rice
1 teaspoon seasoned salt
1/2 teaspoon salt
pepper to taste
1/4 cup Parmesan Cheese
In a large skillet,Saute' Zuchinni, peppers, onion and green tomato in butter,just until vegetables turn color. Add salt, pepper, macaroni or rice and stewed tomatoes; Cover amd cook until vegetables are tender, but still crisp. About 7-10 minutes. Sprinkle parmesan cheese on top.
Note: Add any other vegetables you desire.
