    RAINY DAY SOUP

    1 lb. ground turkey breast
    1 can (46 oz.) low-sodium V-8 juice
    1 jar thick and chunky salsa
    1 can (14-1/2 oz.) low-sodium chicken broth
    1 can (15 to 16 oz.) kidney beans, rinsed and drained
    1 pkg. (10 oz.) frozen mixed vegetables
    4 c. shredded cabbage
    1 c. chopped onion
    1/2 c. cubed peeled potatoes
    1/3 c. medium pearl barley

    In a Dutch oven or soup kettle coated with nonstick cooking spray, brown turkey over medium heat; drain. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 60-70 minutes or until vegetables and barley are tender.

    One 1-cup serving equals: 168 calories�400 mg sodium�12 mg cholesterol�26 gm carbohydrate�15 gm protein�1 gm fat ++++ Exchanges: 2 vegetable�1 very lean meat�1 starch
