Orange-Fennel Autumn Salad -- e-w
Serves: 8
1/3 c. light mayonnaise � or � salad dressing
1/3 c. plain low-fat yogurt
2 T. frozen orange juice concentrate, thawed
1 T. anisette liqueur � or � or orange juice concentrate, thawed
3 c. fresh baby spinach
3 c. torn radicchio
1 medium fennel bulb; trimmed, cored, and thinly sliced
3 seedless oranges � or � Clementine�s, peeled and sliced
For Dressing: In a small bowl, combine the first 4 ingredients.
In a straight-sided large glass bowl combine remaining ingredients; toss gently to combine. Serve salad with dressing.
