Salsa Potato Salad -- e-w
Plan ahead�needs to chill at least 1 hour.
Serves: 7
1/3 c. fat-free mayonnaise
2 T. fat-free sour cream
1/4 c. salsa
1 T. minced fresh parsley
3 c. cubed cooked unpeeled potatoes
1 celery rib, thinly sliced
1/4 c. chopped onion
1/2 c. reduced-fat shredded cheddar cheese
In a bowl, combine the first 4 ingredients. In a bowl, combine potatoes, onion and celery. Add dressing; toss to coat. Stir in cheese. Cover; chill for at least 1 hour before serving.
