Almond Bran Muffins
Yield: 12
1-3/4 c. All-Bran
1-1/4 c. fat-free evaporated milk
1/4 c. stick margarine, melted
1/2 tsp. almond extract
1 c. whole wheat flour
1/4 c. packed brown sugar
1-1/2 tsp. baking powder
1-1/4 tsp. cinnamon
1/2 tsp. baking soda
2 egg whites, lightly beaten
In a bowl combine the first 5 ingredients; let stand for 5 minutes. Meanwhile combine the next 5 ingredients; stir in egg whites and bran mixture. Fill muffin cups coated with nonstick cooking spray or paper liners 2/3 full.
Bake at 350� for 16-20 minutes or until a wooden toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.
