    So-Low-Carb Appetizer -- e-w
    Serves: 4

    Nonstick cooing spray
    1 large red bell pepper, cut into 1-in. pieces
    1 large yellow summer squash. Sliced into 1/4-in.-thick rounds
    1 medium onion, quartered and layers separated
    1 T. olive oil
    1-1/2 tsp. balsamic vinegar
    1/2 tsp. dried basil leaves
    1/8 tsp. salt

    Preheat oven to 475�. Line baking sheet with foil; spray with cooking oil. Arrange vegetables in single layer on baking sheet. Spray vegetables with cooking spray. Roast 14 minutes or until vegetables begin to brown on edges. Do Not Stir.

    Remove baking sheet from oven; place on wire rack to cool.

    Combine remaining ingredients in a small bowl. Drizzle over vegetables. Serve with wooden picks, if desired.
