Roasted Spicy Mustard Potatoes -- e-w
Serves: 8
1/4 c. Dijon mustard
2 tsp. paprika
1 tsp. ground cumin
1 tsp. chili powder
1/2 tsp. salt
1/8 tsp. cayenne pepper
2 lbs. small red potatoes
Spray a shallow roasting pan with cooking spray 3 times to coat well; set aside. In a large bowl whisk the first 6 ingredients. Pierce the potatoes several times with a fork; add to mustard mixture and toss to coat. Place in prepared pan. Bake, uncovered, at 375� for 30-40 minutes or until tender.
