NO-Bake Almond Bites -- e-w
Yield: 1-1/2 dozen
30 reduced-fat vanilla wafers, finely crushed
1 c. confectioners� sugar, �divided� (powdered sugar)
1/2 c. chopped almonds 2 T. baking cocoa
2 T. corn syrup
2 T. apple juice
1/4 tsp. almond extract
In a large bowl, combine wafer crumbs. 1/2 c. powdered sugar, almonds and cocoa. In a small bowl combine corn syrup, apple juice and extract. Stir into crumb mixture until well blended. Shape into 1-in. balls; roll in remaining sugar. Store in an airtight container.
