    Roasted Garlic Spread w/Three Cheeses - 21 -- e-w
    Plan ahead�needs to chill at least 3 hours or overnight.
    Makes 21 servings (2 T. per serving)

    2 medium heads of garlic
    2 8-oz. pkgs. fat-free cream cheese
    1 3-1/2-oz. pkg. goat cheese
    2 T. (1 oz.) crumbled blue cheese
    1 tsp. dried thyme leaves

    Preheat oven to 400�. Cut tops off garlic heads to expose tops of cloves. Place garlic in small baking pan; bake 45 minutes or until garlic is very tender. Remove from pan; cool completely. Squeeze garlic into small bowl; mash with fork.

    Beat cream cheese and goat cheese in a small bowl until smooth, stir in blue cheese, garlic and thyme. Cover and refrigerate 3 hours or overnight. Spoon dip into serving bowl; serve with vegetables or crackers. Garnish with fresh thyme and red bell pepper strip if desired.
