    Take-It-Easy Noodle Dinner

    This casserole is a wonderful change of pace from the usual cream soup based casserole. It seemed like an awful lot of peas and I'm going to add less next time. Low calorie and REALLY large servings!!! - Becky

    Makes 4 servings.

    1 pound ground turkey breast
    1 medium onion, coarsely chopped (1/2 cup)
    1 can (14 1/2 ounces) diced tomatoes, undrained
    1 package (10 ounces) frozen green peas, thawed
    1 package (3 ounces) chicken-flavor reduced fat baked ramen noodle soup mix

    Cook turkey and onion in 12 inch skillet over medium heat about 8 minutes, stirring occasionally, until turkey is no longer pink. Stir in tomatoes, peas and seasoning packet from soup mix. Break up noodles; stir into turkey mixture.

    Heat to boiling, stirring occasionally; reduce heat. Cover
    and simmer about 6 minutes, stirring occasionally to separate noodles, until noodles are tender.
