    Wild Rice and Turkey Casserole

    This is a low calorie version of the traditional "chicken on rice". Believe me it doesn't scrimp on flavor and you certainly won't miss the extra calories!!! The recipe calls for the "regular" cream soup, I used the fat free and made it even lower in calories and fat.

    Exchanges
    Makes 6 servings.

    2 cups cut-up turkey or chicken
    2 1/4 cups boiling water
    1/3 cup skim milk
    1 small onion, chopped (1/4 cup)
    1 can cream of mushroom soup
    1 package fast-cooking long grain and wild rice mix

    Preheat oven to 350 degrees. Mix all ingredients, including contents of seasoning packet from rice mix in ungreased 2 quart casserole.

    Cover and bake 45 to 50 minutes or until rice is tender. Uncover and bake 10 to 15 minutes longer or until liquid is absorbed.

    Nutritional Values: 170 calories, 7 grams fat, 40 mg. cholesterol, 500 mg. sodium, 12 grams carbohydrate ++++ Exchanges: 1 starch, 2 lean meat
