    BROCCOLI-CHICKEN MUFFINS

    Yield 1 dozen

    2 cups biscuit mix
    1/3 cup grated Parmesan cheese
    1/2 teaspoon freshly ground black pepper
    1/4 teaspoon salt
    1/4 teaspoon garlic powder
    1 large egg -- lightly beaten
    1 cup buttermilk
    2 tablespoons vegetable oil
    1 cup cooked broccoli -- chopped
    1 cup cooked chicken -- chopped

    Combine first 5 ingredients in a large bowl; make well in center of mixture.

    Combine egg, buttermilk, and oil; add to dry ingredients, stirring just until moistened. Stir in broccoli and chicken. Spoon into greased muffin pan, filling to top.

    Bake at 425 degrees F. for 20 to 22 minutes. Remove from pan immediately.
