Banana Chip Muffins -- e-w
Yield: 1 dozen
1-3/4 c. flour
1/4 c. sugar
2-1/2 tsp. baking powder
1/2 tsp. salt
1 egg
1/2 c. fat-free milk
1/3 c. vegetable oil
1/2 c. mashed ripe banana
1/2 c. unsweetened applesauce
1 c. miniature semisweet chocolate chips
In a large bowl, combine the first 4 dry ingredients. Combine the next 5 ingredients; stir into the dry ingredients just until moistened. Fold in chocolate chips.
Fill greased or paper lined muffin cups two-thirds full. Bake at 400� for 20 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
