    MCR: Sunny Chicken �N� Rice -- e-w

    MCR: Sunny Chicken �N� Rice -- e-w
    Plan ahead�needs to marinate for 4 hours.
    Serves: 6

    1-1/2 c. orange juice
    1 c. reduced-sugar apricot preserves
    1/4 tsp. allspice
    1/4 tsp. salt
    1/4 tsp. pepper
    1/8 tsp. ground ginger

    2 c. uncooked instant rice
    6 boneless skinless chicken breast halves (1-1/2 lbs.)

    In a small microwave-safe bowl, combine the first 6 ingredients. Microwave, uncovered, on HIGH for 1 to 1-1/2 minutes or until preserves begin to melt; stir to blend.

    Place rice in a shallow 3-qt. microwave-safe dish, arrange chicken on top. Pour sauce over chicken and rice. Cover and refrigerate for 4 hours.

    Cover and microwave at 80% power for 15-20 minutes or until chicken juices run clear and rice is tender.

    One chicken breast w/ 1-cup rice equals: 323 calories�2 gm fat (trace saturated)�66 mg cholesterol�173 mg sodium�46 gm carbohydrate�1 gm fiber�29 gm protein +++EXC: 3 very lean meat�2 starch�1 fruit +++WWP: 6
