    Rich Chocolate Pudding -- w

    Rich Chocolate Pudding -- w
    Alert! High Saturated Fat (5 gm)
    Serves: 4

    2 c. 1% milk

    1/2 c. sugar
    1/2 c. unsweetened cocoa powder
    1 tsp. instant espresso powder � or � 2 tsp. instant coffee
    3 T. cornstarch
    1/2 c. semisweet dark chocolate chips

    1 tsp. vanilla

    In a medium saucepan, heat the milk on medium for 3 minutes. Whisk in the next 5 ingredients. Stir on medium heat until mixture thickens, about 5 to 7 minutes. Remove from heat and stir in vanilla.

    Pour mixture into four 4 or 5-oz. ramekins or small coffee cups. Let cool, uncovered, for about 30 minutes. Serve immediately, or cover with plastic wrap and refrigerate for at least 3 hours. If desired, garnish with chocolate curls

    * NOTE: to make chocolate curls, shave off portions of a chocolate bar at room temperature using a vegetable peeler.
