    MCR: Eight-Minute Microwave Fruit Salad

    1 pkg. (3 oz.) sugar-free vanilla pudding
    1 can (10 oz.) pineapple tidbits in juice
    1 can (10-oz.) mandarin oranges in juice
    2 fresh Kiwi, peeled and sliced into coins
    2 c. red seedless grapes, washed

    Drain juices from pineapple and oranges into a 1-cup glass measure. Add water to make 1 cup of liquid. Pour liquid into a microwave-safe salad bowl. Whisk in the pudding mixture, then microwave on high for 6 minutes, stopping to stir the mixture twice,

    Add 4 large ice cubes to the mixture to speed cooling. Stir until they are dissolved.

    Fold in remaining 4 ingredients. Serve immediately or cover and refrigerate until serving time. This salad lasts very well in the refrigerator..
