    Pineapple Lover�s Salad

    Recipe Introduction

    Plan ahead�needs to chill at least 2 hours Exchanges
    Serves: 12

    1 can (20 oz.) crushed pineapple, not drained
    2 pkg. (3-oz., each) fat-free cream cheese, softened
    1 carton (8 oz.) sugar-free vanilla yogurt
    1 can (20 0z.) pineapple chunk, drained
    1 carton (8-oz.) reduced-fat whipped topping
    Garnish: fresh mint

    Combine crushed pineapple and pineapple juice with softened cream cheese and yogurt in a large salad bowl. Blend until smooth

    Gently fold in drained pineapple chunks and whipped topping. Chill at least 2 hours or until ready to serve.

    One 1/2-cup serving equals: 118 calories�3 gm fat�3 gm protein�21 gm carbohydrate�1 mg cholesterol�57 mg sodium ++++ Exchanges: 1/2 skim milk�1 fruit
