    Peachy Avocado Salsa -- e-w

    Peachy Avocado Salsa
    Plan ahead�needs to chill at least 30 minutes

    Yield: 3 cups

    1 can (15-1/4 oz.) sliced peaches, drained and diced
    1 medium ripe avocado, peeled and diced
    1 T. lime juice
    2 c. diced seeded tomatoes
    1/4 c. diced onion
    2 T. minced fresh cilantro or parsley
    1 T. cider vinegar
    1 to 2 tsp. seeded and chopped jalapenos (wear protective gloves and avoid touching face)
    1 garlic clove, minced
    1/4 tsp. salt

    In a bowl, combine first 3 ingredients. Add remaining ingredients; lightly toss just until combined. Refrigerate for at least 30 minutes. Serve with tortilla chips, fish or chicken.
