    OYSTER FRITTERS

    Yield: about 20 fritters (2 per serving).

    1 cup pancake mix
    1 teaspoon baking powder
    1 pint oysters -- undrained
    1 egg
    2 tablespoons finely chopped onion
    Salt and pepper
    1/4 cup vegetable oil

    Combine first 5 ingredients, mixing well; add salt and pepper to taste.

    Drop mixture by tablespoonfuls into hot oil. Fry until brown on one side; turn and fry until done. Drain well on paper towels. Serve fritters hot.
