Lima Bean Medley

1 large green pepper, chopped
1 medium onion, chopped
2 garlic cloves, minced
2 tsp. olive or canola oil
1-1/2 c. chopped fresh tomatoes
1 c. cooked fresh or frozen lima beans
1 c. fresh or frozen corn
1/2 c. minced fresh basil
1/8 tsp. salt
1/8 tsp. pepper
In a large nonstick skillet, saut� the green pepper and onion in oil until tender. Add tomatoes. Reduce heat; simmer, uncovered, for 5 minutes. Stir in lima beans and corn; cover and simmer 10 minutes longer or until vegetables are tender. Stir in basil, salt and pepper.
