    Reuben Casserole

    Recipe Introduction

    Serves either 4 or 8 depending on the serving size. for 4 servings points would be 11 for 8 servings points would be 6

    List of Ingredients

    8 oz light sour cream
    1 onion, chopped
    1 can sauerkraut, drained
    2 cans corned beef
    7 slices swiss cheese or enough to cover top of casserole
    5 slices rye bread
    butter flavored cooking spray

    Recipe

    Tear rye bread into small pieces and toast in skillet to make croutons.
    Cook onion until soft.
    Mix onion and sour cream and spread in bottom of casserole.
    Layer in following order:
    sauerkraut
    corned beef
    sliced swiss cheese
    croutons
    Bake at 350 for 45 minutes or until hot and cheese is hot.
