    THIS IS A VERY RICH, SIMPLE, YET ELEGANT PASTA. IT IS EASY TO PREPARE AND REQUIRES LITTLE PREPARATION AND COOK TIME. ***THIS IS PROBABLY NOT A DISH FOR THE CALORIE CONSCIOUS, BUT HEY, YOU GOTTA SPLURGE EVERY NOW AND THEN!!!***


    List of Ingredients


    • 4 CHICKEN BREAST
    • 1 TABLESPOON OLIVE OIL
    • 2 CLOVES CHOPPED GARLIC
    • 1 SMALL YELLOW ONION (CHOPPED )
    • 1 SMALL CAN SLICED BLACK OLIVES (DRAIN LIQUID)
    • 1 SMALL CAN SLICED MUSHROOMS (DRAIN LIQUID)
    • 1 LARGE CAN ARTICHOKES (DRAIN LIQUID)
    • 1 CAN CHICKEN BROTH
    • 1 CUP HALF-AND-HALF OR LIGHT CREAM
    • 1/4 TEASPOON SALT
    • 1/4 TEASPOON FRESH GROUND BLACK PEPPER
    • 1 4OZ PHILADELPHIA CREAM CHEESE
    • 1/4 CUP FRESH SHREDDED PARM
    • 1/4 CUP CRUMBLED BLUE CHEESE
    • LINGUINE(BEST) FUSILLE OR FETTUCINI PASTA


    Instructions


    1. SAUTE CHICKEN BREAST, ONION, AND GARLIC IN OLIVE OIL UNTIL THE ONION AND GARLIC ARE TENDER.
    2. ADD ALL OTHER INGREDIENTS EXCEPT THE CHEESES.
    3. COVER AND SIMMER FOR 30 MINUTES OR UNTIL CHICKEN IS DONE. (I RELY HEAVILY ON MEAT THERMOMETER)
    4. ADD THE CHEESES, SIMMER ABOUT 10 MORE MINUTES.
    5. WHILE SIMMERING, PREPARE PASTA OF YOUR CHOICE, (BEST WITH LINGUINE)


    Final Comments


    THIS IS A GREAT DISH!! TOO MUCH, OR TOO LITTLE, OF ANY INGREDIENT WILL AFFECT THE TASTE AND FLAVOR OF THIS DISH. IF YOU ARE ENTERTAINING OR TRYING TO IMPRESS, SPRINKLE WITH CHOPPED PARSLEY!!
