    Meatballs with Mixed Vegetables

    List of Ingredients

    • 1 (10 oz. pkg.) frozen mixed vegetables
    • 1 egg
    • 1/4 c. milk
    • 1 c. bread crumbs
    • 1/2 t. dry mustard
    • 1/2 t. celery seed
    • 1/4 t. salt
    • 1/4 t. ground nutmeg
    • 1/4 t. pepper
    • 1/4 c. chopped onion
    • 1 lb. ground beef
    • 2 T. shortening
    • 1 can Cream of Mushroom soup
    • 3/4 c. milk


    1. Rinse frozen vegetables under cold water to separate; drain.
    2. Mix egg, milk, bread crumbs, mustard, celery seed, salt, nutmeg, pepper, onion and ground beef. Shape into 1-1/2 inch balls. Heat shortening in skillet. Cook meatballs in shortening until done. Remove meatballs from skillet and drain.
    3. Mix Cream of Mushroom soup and milk together in skillet then add mixed vegetables. Heat to boiling; reduce heat. Add meatballs, cover and simmer for 20 minutes, until vegetables are tender.
