    List of Ingredients

    • 2 c. flour
    • 1 t. baking soda
    • 1/2 t. salt
    • 1/2 c. shortening
    • 1 t. vanilla
    • 1 c. sugar
    • 2 eggs
    • 3 med. bananas
    • 1/4 c. chopped nuts, optional


    1. Preheat oven to 325 degrees.
    2. Sift together flour, baking soda and salt; set aside.
    3. Blend together shortening and vanilla. Gradually add sugar, creaming until light and fluffy. Add eggs, one at a time beating well after each addition. Mash bananas; add alternately with the dry ingredients. Add nuts, if desired. Pour into greased loaf pan.
    4. Bake at 325 degrees for 1 hour and 15 minutes. If using mini loaf pans bake for 40-45 minutes.
