    Blueberry Lemon Tea Bread

    List of Ingredients

    • 1 stick margarine, softened
    • 1-1/3 c. sugar, divided
    • 2 eggs
    • 2 c. flour
    • 2 t. baking powder
    • 1/2 t. salt
    • 1/2 c. milk
    • 1-1/2 c. blueberries
    • 1/4 c. fresh lemon juice


    1. Preheat oven to 350 degrees. Grease and flour two loaf pans.
    2. Beat margarine and 1 cup sugar until light and fluffy. Add eggs to margarine mixture.
    3. In a separate bowl, combine flour, baking powder and salt. Alternating add flour and milk, mixing just until blended. Gently stir in blueberries. Spoon batter into loaf pans.
    4. Bake 1 hour or until toothpick come out clean. Cool 10 minutes then remove from pan. Prick top and sides of warm bread.
    5. Mix lemon juice and sugar to make a glaze. With a pastry brush, brush top and sides of bread with lemon glaze.
